Italian Meringue

Method

  1. Dissolve sugar in water & bring to the boil
  2. Cook for 3-4 minutes or until it starts to colour
  3. Meanwhile, beat egg whites until they are white but not stiff
  4. Add a little lemon juice
  5. While still mixing slowly the egg whites, slowly add sugar syrup
  6. Once all the syrup has been added turn up the mixer & beat until stiff
  7. I hold the mixture above my sons heads to check consistency

To Make desserts

  1. Get four portions of ice-cream. I use ramakins lined with cling film
  2. Cut 8 circles on the same shape as the ice-cream
  3. Coat with meringue
  4. Put in freezer for an hour or when you wish to use them
  5. Remove from freezer & cook meringue with butane torch
  6. I leave them to set for 5 minutes before serving as my freezer is quite cold.

Ginger Sponge

Method

  1. Bring butter & syrup to near boil
  2. Add the baking soda, beaten egg & milk
  3. Remove & place in cold water
  4. Stir into dry ingredients until smooth
  5. Pour into buttered & floured cake tin
  6. Cook for 3/4 hour at 180 degrees.

Alternative

Alternative to Christmas pudding & a stunner for dinner parties. We bought an ice cream maker to make the Baileys ice cream. I am sure any flavour will do.
