Meanwhile, beat egg whites until they are white but not stiff
Add a little lemon juice
While still mixing slowly the egg whites, slowly add sugar syrup
Once all the syrup has been added turn up the mixer & beat until stiff
I hold the mixture above my sons heads to check consistency
To Make desserts
Get four portions of ice-cream. I use ramakins lined with cling film
Cut 8 circles on the same shape as the ice-cream
Coat with meringue
Put in freezer for an hour or when you wish to use them
Remove from freezer & cook meringue with butane torch
I leave them to set for 5 minutes before serving as my freezer is quite cold.
Ginger Sponge
500g golden syrup
125g butter
250g self raising flour
1/2 tsp bicarbonate of soda
1 tsp ginger
1 cup milk
1 egg (beaten)
1/2 tsp salt
Method
Bring butter & syrup to near boil
Add the baking soda, beaten egg & milk
Remove & place in cold water
Stir into dry ingredients until smooth
Pour into buttered & floured cake tin
Cook for 3/4 hour at 180 degrees.
