Almond Chicken

Method

  1. Slit skin in chicken and add as many chopped garlic slivers as you want
  2. Throw some whole garlic cloves, pealed inside the chicken
  3. Add shallots and a onion to bottom of cooking pan
  4. Put chicken in cooking pan and pour 1/2 stock over it then put the chicken into the oven
  5. Keep basting the chicken and add the stock to the pan if it is evaporating
  6. Cook for whatever the chicken size says (40 minutes a kilo at 180 degrees)
  7. Once cooked remove and leave to cool
  8. Get the pan of juice put onto the hob add mushrooms and peas and if required some flour to thicken
