Garlic Chicken
Method
- Slit skin in chicken and add as many chopped garlic slivers as you want
- Throw some whole garlic cloves, pealed inside the chicken
- Add shallots and a onion to bottom of cooking pan
- Put chicken in cooking pan and pour 1/2 stock over it then put the chicken into the oven
- Keep basting the chicken and add the stock to the pan if it is evaporating
- Cook for whatever the chicken size says (40 minutes a kilo at 180 degrees)
- Once cooked remove and leave to cool
- Get the pan of juice put onto the hob add mushrooms and peas and if required some flour to thicken

- 1 whole large chicken(Organic)
- 8-10 cloves garlic (more if you want)
- shallots, onions
- Mushrooms
- Peas
- 2 or 3 cups homemade chicken stock (basting)
