We decided to try new food this year and with the gift of a Pasta maker from Beany and Simon our new adventure into Italian food has begun.

Almond Chicken

Method

  1. Cut the bacon into small pieces and fry
  2. Cook onions and garlic. Put these aside for the moment in the frying pan
  3. In a saucepan heat the butter and oil
  4. Add the liquidised tomatoes and bring to the boil
  5. Reduce the heat and simmer for about 40 minutes or until the sauce is reduced by about half
  6. Stir in the basil and parsley
  7. Transfer to your frying pan and mix together with the bacon onion and garlic
  8. Set aside whilst you make the pasta
  9. Once the pasta is cooked combine the pasta and sauce and serve with a generous helping of parmesan Cheese

Making Fresh Pasta Dough

Homemade Pasta Dough

Preparing your pasta dough:

  1. Tip the flour on to the table making a well in the middle, add the olive oil and the eggs into the well.
  2. Using a fork stir the egg mixture quickly pushing the flour in  from the sides. Keep stirring until you have formed a sticky dough ball.
  3. Now you need to knead adding  more flour into the dough as needed, keeping kneading for about 10 minutes  or until the dough is smooth, elastic, and no longer sticky. 
  4. Wrap the dough in plastic wrap and let rest at room temperature for 30-60 minutes.
