Mushroom & Bacon Risotto
Comfort food, easy to make & loved by all of our family. You have to buy a bottle of White wine so there is another good reason to make it.
Method
- Heat Olive oil in a saute pan
- Fry chopped garlic for a minute being careful not to burn it
- Add Onion & cook until soft
- Add Mushroom & cook until slightly softened
- If using add walnuts
- Add rice & white wine. Mix until the wine has evaporated
- Add 1/4 of the stock & stir until absorbed
- Slowly add the remaining stock until all is absorbed
- Take off heat & add cheese & herbs
